How to make Pots for Tots Apricot & Carrot Oat Bites at home
We’re saying a sweet farewell to our Apricot & Carrot Oat Bites to make space for new favourites on our menu - but, because we know many of your little ones have a soft spot for these toddler-friendly snacks, it isn’t a full goodbye! Lizzy, our amazing Head of Product, has amended the recipe, so you can bake your very own batch of these sweet bites at home. A little gift from our kitchen to yours…
These hidden veg snacks are perfect for lunchboxes and after-school bites, plus, the apricot and carrot have brilliant benefits for your children, too!
“Double orange with our hero ingredients apricot and carrot means a healthy dose of beta-carotene, which is used by the body to support vision and eye health. Dried apricots are also a source of iron, a key nutrient for young children.” - Lucy, our Children’s Dietitian
The six ingredients you’ll need:
- 320g rolled oats
- 200g grated carrot
- 200g dried apricots
- 60g raisins
- 300g unsalted butter
-
100g clear honey
Here’s how to make a batch of your own Apricot & Carrot Bites:
- Preheat your oven to 180°C (or 160°C fan).
- Melt the butter in a large saucepan over low heat. Once melted, stir in the honey until fully combined.
- Chop the apricots and raisins into small pieces, around 5mm chunks. (You can leave the raisins whole if you prefer!).
- Remove the saucepan from the heat and stir in the oats, grated carrot, chopped apricots, and raisins.
- Pour into a lined baking tin and press the mixture in evenly and firmly.
- Bake for around 18 minutes or until golden brown on top.
- Cool in the tin for at least 30 minutes. Once completely cooled, you can pop the tin in the fridge.
- Slice into bars or bites and store in an airtight container for up to 3 days. Alternatively, you can freeze and then warm them up in the microwave!
