Easy kids recipe: Flapjack yoghurt bark

So far on the blog we’ve shared our roasted peaches recipe, and an easy guide to making your own homemade healthy ice lollies, and now we are back with another healthy summer snack idea for kids!

This is our t-OAT-ally delicious take on yoghurt bark - great for when the sun starts to come out to play. This refreshing yet filling snack is super easy to throw together, a real crowd-pleaser, and ideal for keeping in the freezer for when you get those last-minute snack requests! Plus, this recipe is a source of fibre, calcium, iodine, Vitamin C and Vitamin E⁣ . Delicious and nutritious, what more could you ask for?

What you’ll need:

  • 2 mugs of oats⁣

  • 50g butter or dairy-free spread (melted⁣)

  • 2 tbsp nut butter of choice (we like to use almond butter!)⁣

  • 500g of yoghurt of choice⁣

  • Toppings of choice, e.g. slices of fruit, raisins, seeds, or chocolate chips

How to make:

  • Line a large baking tray with greaseproof paper or foil⁣.

  • Melt your butter/spread in the microwave or on the hob, adding your nut butter of choice just as it’s melted to combine.⁣

  • Mix your butter mixture with the oats and spread a layer across your baking sheet roughly. It doesn’t have to be perfect⁣!

  • On top of your oat mixture, spread your yoghurt evenly, followed by sprinkling on any toppings of choice⁣.

  • Place this in the freezer until it is solid, then remove it from the freezer around five minutes before you want to serve. Break off a slice and tuck in. Enjoy!
